Ireland is a nation of cabbage lovers.  Whether it be the white or red cabbage found in coleslaw, York cabbage, Savoy cabbage, or green, the Irish know how to grow it and love to eat it.  The Irish have teamed it up with mashed potatoes to make the dish colcannon, a classic of Irish cuisine.

 

ORIGINS:  Depending on the variety, our cabbage usually hails from either Meath, Louth or Dublin.

 

NUTRITION:  While levels do vary acording to variety, cabbage is packed full of Vitamin C (immune system health) and K (bone and blood clotting health), and is a great source of folates.

 

TIP:  Cooking is key to geting cabbage right - if they are overcooked, they lose a lot of their natural sweetness.
