A wholesome, beautifully basic vegetable soup is an essential part of any healthy winter diet - or year round for that matter.  Using the the healthy root veg that we are so good at producing here in Ireland, you can tick off probably at least three of your five a day fruit and veg by having a good sized portion for your lunch or tea.  It's easy to make, easier yet to eat (no matter how dosed you might be) and will arm you with many of the vitamins and nutrients you need to make your day productive!  So here's a a beautifully basic recipe for a beautifully basic soup that ticks all the basic boxes.

  • 2 tbsp olive oil, or 30g/1oz butter
  • 1 onion, peeled and chopped
  • 1 garlic clove, peeled and chopped
  • 1-2 fresh red chillies, de-seeded and chopped
  • 1 potato, peeled and cut into chunks
  • 1 turnip
  • 1 carrot
  • 1 leek
  • 1 parsnip
  • 1-1.5 litres/1¾-2¾ pints) vegetable or chicken stock
  • salt and pepper to your taste
  1. Heat the oil or butter gently in a large saucepan, then add the onion, garlic and chillies, folloowed by the vegetables, for approx 10 minutes.

  2. Add the stock and season with salt and freshly ground black pepper.

  3. Bring up to the boil, then simmer gently for about 20 minutes or until all the vegetables are tender.

  4. Liquidise in several batches, and return to the pan. 

  5. Reheat when needed, adding cream if you want a creamier soup.
