This soup showcases our lovely array of Irish root vegetables.  It is a family favourite with good reason; we grow the potatoes, carrots and onions ourselves!  With every tasty mouthful, we appreciate all the hard work that was put into bringing the ingredients to harvest.  Filled with nutritious, delicious, wholesome, goodness, this soup deserves its place an an Irish standby favourite for any occasion.  Enjoy!


  • 2 tablespoons butter
  • 2 onions (chopped)
  • 2 cloves garlic (chopped)
  • 1.25 litres stock, either vegetable or chicken
  • 2 peeled parsnips
  • 225g peeled, chopped celeriac
  • 3 stalks celery
  • 1 large potato (peeled)
  • 2 carrots, peeled
  • 120 ml cream
  • sea salt and black pepper, to taste
  1. In a soup pot, add butter, onions, and garlic. Over medium heat, saute until onions are translucent.
  2. Add broth, and bring to a boil.
  3. Peel and chop the remaining vegetables. Add to the boiling broth.
  4. Continue to boil over medium high heat for 15-20 minutes, until the vegetables are tender.
  5. In batches, process the soup and vegetables in a blender (or immersion blender) until soup is smooth.
  6. Add cream. Season with sea salt and pepper.
  7. Garnish with parsley or dill, if desired.
